Hello dear lusts. Today I prepared BABA GANOUSH WITH CHIPS FROM LAVAȘ. This is an oriental style eggplant salad based on eggplant, sesame paste or as it is also called TAHINI, lemon juice and olive oil. Ingredient:

  • 2 sea eggplants (about 1.5 kg.)
  • 2 tablespoons sesame paste (Tahini)
  • 1 tablespoon - 30% cream (or natural yogurt)
  • 2 cloves of garlic
  • 1 knife tip - ground coriander
  • 1/3 teaspoon - chilli pepper
  • 3 tablespoons olive oil
  • Lemon juice
  • Salt and black pepper

Method of preparation:

  1. Arrange the eggplant on a baking tray lined with aluminum foil. Then put them in the preheated oven at 200 degrees C for 1 hour or until well softened, also do not forget to turn them periodically.
  2. Remove from the oven and place in a large bowl, cover with cling film and let cool for 10 minutes. This will make it easier to peel.
  3. After you have cleaned them, put them in a strainer for 15 minutes to drain the juice from them.
  4. Then put them in a blender bowl, add sesame paste on top, grate the garlic through a small grater, season with ground coriander, chili pepper, salt and black pepper. Pour olive oil, add sour cream, squeezed lemon juice and mix everything together for 10-15 seconds or until it becomes a homogeneous paste.
  5. Pour the pasta into a bowl, cover with cling film and leave in the fridge for at least 2-3 hours.
