    Combine syrup ingredients in a small saucepan. Heat over medium heat until sugar is dissolved and liquid is hot. Use a potato masher or large fork to mash up cantaloupe pieces. When sugar is dissolved, remove from heat and let cool slowly.

    Strain out solids from syrup and store refrigerated in an airtight container for up to 10 days.

    To make a mojito, combine rum and cantaloupe syrup in a cocktail shaker with ice. Shake to chill. Strain over fresh ice in a glass and add a splash of club soda. Garnish with fresh cantaloupe balls and fresh mint.

The exact amount of cantaloupe you use for the syrup isn’t too important. I’d use about 1/4 of a cantaloupe.When the syrup is done, just strain out the solids and you’ll have a beautiful, orange syrup that’s perfect for mixing.Shake together some of the syrup with light rum and pour it over fresh ice with lots of melon balls and fresh mint as a garnish.A little cocktail umbrella is very optional, but also very fun!
